Salt Restaurant in Tallinn – an honest review and a play of flavours

Salt is located in Tallinn at Vase 14 / Faehlmanni 15, and it’s one of those restaurants where you feel that your expectations are already high… yet they still manage to exceed them again and again.

This was not my first time visiting Salt, and honestly, before arriving I wondered: can they still surprise me?

The answer is simple – yes, they absolutely can 😄

You definitely won’t leave hungry here, as the portions are generous and every dish is substantial, full of flavour and thoughtfully prepared.

During FoodLover Restaurants Week, from February 11–22, you can enjoy a 3-course menu for only €29:

Roasted and smoked cauliflower – lime-mint romanesco / yeast cream (G, L)

Beef shoulder – roasted celeriac / truffle-red wine sauce / parmesan

The dish is lactose- and gluten-free, but there is absolutely no lack of flavour – quite the opposite. The nutritional yeast cream adds an interesting and pleasantly tangy nuance that ties the whole dish together. Very balanced and thoughtfully prepared. It’s the kind of dish that makes you look at cauliflower in a completely new way 👌

The evening started with the Finnish unfiltered wine Baba Yaga. Very clean, crisp and pleasantly spicy. There was even a subtle minty nuance on the palate, which made the wine feel particularly fresh and unique. Its slightly greenish tone already hinted that this was not an ordinary wine, and the first sip confirmed it completely.

The wine pairing recommendation was very precise – fresh, spicy and a perfect match for the rich cauliflower dish.

The meat – wow, simply wow 🥩🔥

Beef shoulder – roasted celeriac / truffle-red wine sauce / parmesan

And now the moment… chunk steak (beef shoulder) – the meat falls apart under the fork, you hardly even need a knife. Wonderfully peppery, juicy and incredibly tender. This is that classic Salt feeling: how is it possible that they manage to surprise you with something completely new once again?

The meat is slow-cooked overnight at a low temperature, making it exceptionally tender.

Alongside it, there’s pleasantly sweet Jerusalem artichoke, while the red truffle sauce adds depth and the parmesan brings a touch of saltiness. Together they create a perfect explosion of flavours 🤍

The red wine – Veramonte: organic, pleasantly spicy, with notes of dark berries, a hint of honeyed sweetness and no aggressive tannins. A very good choice to pair with the meat and overall a lovely wine to enjoy.

Broken pavlova with passion fruit foam

Mmm, a true Salt classic 😋. Wonderfully citrusy, slightly tangy and at the same time sweet. Very well balanced, not overly sweet, and a perfect way to finish the whole menu.

The passion fruit cream and marinated sea buckthorn added to the pavlova give it an extra spark of flavour. A truly excellent finale 👌

Alongside it, they served their house-made limoncello 🍋. Tangy, sweet, fresh and absolutely delicious.

The atmosphere at Salt is always pleasant – calm yet lively. The service is professional, attentive and warm. Even when the restaurant is busy, the pace stays well managed and guests are never overlooked.

The creator of Salt and the so-called “flavour angel” Tiina Kõresoo has built a place where simple ingredients are turned into remarkable taste experiences. Every course is thoughtfully crafted, and the element of surprise doesn’t disappear even on the second, third or tenth visit.
